GALETTE
SWEET OR SAVORY

A friend recently shared these galettes and indeed they was delicious! I am now sharing the recipe with the whole world!
This recipe is very forgiving, experiment until you get what works best for you. Some like it more moist and cake-like, others more like a dense hard texture, like a thick cracker. Just add or reduce water to get the different texture. This is a medium between the two, like a slice of dense bread. It is really nice toasted with some spread or cheese for breakfast, or toasted and dipped in olive oil.
Here is the basic:
3.5 tablespoons chick pea flour
5.5 oz buckwheat flour (all measurements in ounces are by volume, not weight)
3.5 oz spelt flour
9.0 oz of rice four
½ tsp baking soda
a little salt
½ packet of yeast
Mix all dry ingredients well together, then add sweet or savory ingredients of your choice, (some recommendations below).
Add 2 and ½ cups of water
Dough should be very thick, press into form coated with butter or oil, (11 x 7.5 inch baking dish is good)
Heat in pre-heated oven at 375 degrees for 10 minutes
Reduce heat to 225-250 for 15 minutes
It’s done as soon as edges detach from pan.

For Sweet:
Add 2 cups of dried fruits and nuts of your choice. I used dried apricots, dates, raisins, sour cherries and walnuts.
For Savory:
Add pre-sauteed shallots, onions, pitted olives, mushrooms, herbs of your choice, seeds and nuts. I pan roast sunflower and sesame seeds and put them both in the dough and on the top.
