Oh, I love one-pot recipes too! One of my go-to vegan dishes is a chickpea and spinach curry. It's super easy to make, and all you need is a pot! I cook some onions, garlic, and ginger with spices like cumin and turmeric, add canned tomatoes, chickpeas, and fresh spinach, and let it simmer for a while. It’s packed with flavor and super satisfying. I can't wait to try more of the recipes shared here.
