One-pot lasagna is one of my favourite go-tos!
For the ricotta on top, I usually do a tofu ricotta!

Vegan One-Pot Lentil Curry

Sauté 1 diced onion, 2 minced garlic cloves, and 1 tbsp ginger in a pot with oil.

Add 1 tbsp curry powder, 1 tsp turmeric, and 1 tsp cumin; cook for 1 minute.

Stir in 1 cup rinsed lentils, 1 can diced tomatoes, 1 can coconut milk, and 2 cups veggie broth.

Simmer for 20-25 mins until lentils are tender.

Add a handful of spinach and cook until wilted.

Serve with rice or naan. Quick, easy, and packed with flavor!
